Preheat the oven to 350F.
In a medium-sized bowl, place sliced plum pieces.
Sprinkle with brown sugar, lemon juice, sea salt, and pepper to taste.
Mix well until the plums are coated.
Roll out filo dough and brush the top layer with melted butter.
Place brie round on top of buttered filo dough.
Layer plum mixture on top of the brie and begin to wrap brie/plums with the filo dough.
Brush the edges of the filo dough with more butter in order to get them to stick together. Do this until the cheese and plums are wrapped completely. Brush with additional butter until the dough is well coated.
Place wrapped brie on a lighted greased cookie sheet and bake in the oven for 20-25 minutes until the filo dough has lightly browned.
Serve hot with crackers or bread.
