Bring 3/4 cup water, the fresh sliced nectarine, honey, and basil to a boil in a small pot. Let simmer for 5 minutes or until the nectarines are soft. Remove from heat and strain into a glass jar to chill. Set aside.
In a high powered blender, combine the frozen nectarines, champagne, simple syrup, and 1/2 cup of ice. Blend until smooth. Pour into glasses and serve with fresh nectarine slices, enjoy!
