Blended Nectarine Mimosa

Our twist on a classic mimosa! Featuring frozen nectarines, champagne, and a honey basil simple syrup - this blended cocktail is perfect for a poolside summer day!

Honey Basil Nectarine Simple Syrup
 1 ripe nectarine, sliced
 ¾ cup water
 ¼ cup honey
 3 sprigs of fresh basil
Blended Nectarine Mimosa
 2 oz honey basil simple syrup
 1 (750 ml) bottle champagne
 4 cups frozen nectarines
 ½ cup ice

Bring 3/4 cup water, the fresh sliced nectarine, honey, and basil to a boil in a small pot. Let simmer for 5 minutes or until the nectarines are soft. Remove from heat and strain into a glass jar to chill. Set aside.

In a high powered blender, combine the frozen nectarines, champagne, simple syrup, and 1/2 cup of ice. Blend until smooth. Pour into glasses and serve with fresh nectarine slices, enjoy!
