Stonefruit Thyme Tartlet

These delightful stonefruit thyme tartlets are the perfect treat to showcase the natural sweetness and vibrant flavors of peaches, plums, and nectarines. With just six simple ingredients and minimal prep, you can create a stunning dessert that will impress your family and friends.

 3 peaches, plums, nectarines (or a combination of these)
  cup honey
 3 sprigs fresh thyme
 1 tsp vanilla
 1 puff pastry sheet
 ¾ cup mascarpone cheese

Thinly slice the stonefruit and place them in a heat-safe bowl. Over medium heat, combine honey, thyme, and vanilla in a saucepan. Stir till the sauce comes to a boil. Remove from heat and pour the honey sauce over the sliced stonefruit.

Roll out the pastry sheet to ¼ inch thickness. Cut into 12 squares and arrange each piece in a muffin tin. Spoon a heaping tablespoon of mascarpone cheese into the center of each. Add three slices of stonefruit to each. Spoon a teaspoon of the leftover honey sauce on each tartlet. Bake for 25 minutes, until puff pastry is golden brown.
